Lemon Loaf




   I absolutely love anything with lemon in it. It is so summery and just makes me happy, I love the tangy flavour and also the sweetness that all the other ingredients add to it. This lemon loaf is fantastic and easy to make. I could eat a whole one :)



Ingredients:
5 1/4 cup flour
2 1/4 cup sugar
6 tsp baking powder
3/4 tsp salt
3 beaten egg
3 cup milk
3/4 cup cooking oil
finely shredded lemon peel from 3 large lemons
1/2 C lemon juice 
Glaze:
6 tbsp lemon juice
3 tbsp sugar
Preheat oven to 350.
Grease and flour 3 medium size loaf pans. In a large bowl, stir together the flour, sugar, baking powder and salt. Make a well in the center and set aside.
In another medium bowl, combine the egg, milk, oil, lemon peel and lemon juice. Add the egg mixture all at once to the flour mixture and stir until just combined. The batter will be lumpy. Pour the batter into the loaf pan and bake for 40-50 minutes until a toothpick inserted near the center comes out clean.
Mix the lemon and sugar until dissolved and brush over the bread as soon as it comes out of the oven. Poke little holes in your loaf when it comes out of the oven and then brush with the glaze, it will soak into the loaf. Yummy.

Looks delish! If I want to third the recipe (and make just one loaf), will the cooking time be altered too?
This is totally going on my list of 'things to make'. :)

It shouldn't, because you would bake all the loaves at different times. But if you are making a smaller one then I would start out at 30 minutes and see how done it is. :) I hope you do enjoy it when you make it back here!
