One of my favourite things to do it bake, as you have probably already noticed. I also have some friends who love to bake and cook as well. Starting last week I went to hang out with my one close friends and we decided to bake. She didn't really think that I would want to as I do it everyday at work but I assured her that I never get tired of baking :) So now ever since then we bake every Thursday. Starting at 1:30 pm and baking till 4pm, we have a great time of talking, laughing, trying new recipes and experimenting with many recipes as well. It is a great to be able to set aside time just for baking. You learn so much about a person through the way that they bake, you can tell if they are a perfectionist or if they care, but know the recipe won't change to much if you add just a few more chocolate chips! I love to watch other people bake as it tells a lot about them.

Lemon Loaf
I absolutely love anything with lemon in it. It is so summery and just makes me happy, I love the tangy flavour and also the sweetness that all the other ingredients add to it. This lemon loaf is fantastic and easy to make. I could eat a whole one :)
Ingredients:
5 1/4 cup flour
2 1/4 cup sugar
6 tsp baking powder
3/4 tsp salt
3 beaten egg
3 cup milk
3/4 cup cooking oil
finely shredded lemon peel from 3 large lemons
1/2 C lemon juice
2 1/4 cup sugar

Glaze:
6 tbsp lemon juice
3 tbsp sugar
6 tbsp lemon juice
3 tbsp sugar
Preheat oven to 350.
Grease and flour 3 medium size loaf pans. In a large bowl, stir together the flour, sugar, baking powder and salt. Make a well in the center and set aside.
In another medium bowl, combine the egg, milk, oil, lemon peel and lemon juice. Add the egg mixture all at once to the flour mixture and stir until just combined. The batter will be lumpy. Pour the batter into the loaf pan and bake for 40-50 minutes until a toothpick inserted near the center comes out clean.
Mix the lemon and sugar until dissolved and brush over the bread as soon as it comes out of the oven. Poke little holes in your loaf when it comes out of the oven and then brush with the glaze, it will soak into the loaf. Yummy.
Baking Through a Cook Book...
It has been a long time since I have updated my blog as I moved out to Hope, BC for 3 months to work at a summer camp. I was basically the head baker, I got to make whatever desserts that I wanted and experiment quite a bit. I made many things that I have never made before and it was a lot of fun and a great experience. It was nice to be able to have my own space and work with lots of really great people. The whole time I was at camp it was an amazing experience and I wouldn't trade it for anything. I am so glad that I went and I would love to go back it a couple of years when I am actually a Red Seal Baker and really use my skills to make some amazing things. It might happen one day... I guess I will see where my life is headed. I am so excited for school and I can't wait to learn everything! It is going to be phenomenal, I absolutely love learning new things and especially when it comes to baking! I have so many plans for my future it is crazy I don't know how I am going to do everything. Oh well, I guess I will only do the best and most important things. :)
Well on to my topic for this post! I have decided that I am going to bake everything in one cookbook! I have always wanted to do this and I have always wanted to try lots of new recipes. So I am not sure what book to do though. I really like this one called bon appetit desserts. It is really big and I think it would take a couple years to complete. But that is okay I have a lot of time. I really think that I will do that one. I just got it and am totally and completely in love with it. I could just have a million cook books and never get tired of them, it is something that I love. Just sitting and reading through them and looking at the pictures and such. It is fantastic. As you can see by this photo it is kinda big.... well here is the start of a great adventure! Baking through the whole book of bon appetit desserts! I hope you will enjoy all the delicious things that I will be making. Well, here we go... The cook book of all things sweet and wonderful!
